Part 3: Growing Our Food. Part Three of the From Farm to Fork: Experts on Our Food Supply series explains the sourcing of our food from local and national destinations. One expert shares her experience of growing up on a farm where her family grew all their own food, but states this is a way of life that is not practical for the everyday American who has a full-time career. By having national and global suppliers, we can select a variety of foods from all over the country and the world, where different foods need different climates, soils, and agricultural systems to grow. Although local farms are one option, regional, national, and global sources are necessary in order to meet the nutritional needs of the population. This segment includes interviews with experts Connie Weaver, PhD, of Purdue University; Roger Clemens, DrPH, of the University of Southern California; Aurora Saulo, PhD, of the University of Hawaii at Manoa; and Martha Roberts, PhD, of the University of Florida. Moulton's Farm, Meredith, New Hampshire, NH Located in scenic Meredith, New Hampshire, Moulton Farm spans a total of 180 acres, more than half of which is used to grow fruits and vegetables, including white and yellow corn, tomatoes, squash, peas, pumpkins, and strawberries. In addition to a wide variety of fresh produce, Moulton Farm also grows herbs, flowers, and both potted and bedding plants in its large greenhouse. The farm's country bakery produces pies, breads, rolls, and many other prepared foods, such as salad dressings, jams and preserves, honey, and maple syrup. Residents and tourists of the Lakes Region have come to depend on Moulton Farm for the freshest cooking ingredients, beautiful plants, and tasty breads and pies. On a typical day, hundreds of people visit the Moulton Farm Market to select from the day's freshly-picked fruits and vegetables and to enjoy the farm's picturesque setting and New England charm. When selecting salmon try to select wild salmon, not farm raised salmon. Sure wild salmon is expensive, however it is healthier. Wild salmon has a rich dark color as it is lean with minimal fat. Due to wild salmon not penned in but have the vast ocean waters to swim and burn off any fat. While farm raised salmon is a sickly pale color due to plenty of fat. The farm raised salmon have a limited space to swim, thus making it difficult to shed off the fat. For this video farm raised salmon was purchased at Kroger supermarket at about $7.50 a pound. Also purchase wild salmon at Whole Foods Market at about $22.00 a pound. Prepare the salmon rubbing olive oil and sprinkle with lemon pepper seasoning. Place on cooking sheet and bake on 350 degrees for about 35 minutes. If the cooking sheet you use is aluminum, may want to line it with parchment paper. This would prevent the salmon from baking while sitting on top of aluminum. Also remember maintaining a diet is all about portion size. Keep the portions small, supplement meals with vegetables. Eat fruit between meals. Our British asparagus (and quite a few other veg) comes from Clive Martin's fenland farm, Holm Select, in East Anglia. "Holm is ancient dialect for Fenland Island, which we are -- an island of organic amongst all this conventional farmland." Although the farm's actually below sea level, so would be more of an underwater island. Clive's father and grandfather grew spuds and onions. But adventurous young Clive now grows asparagus, globe artichokes, rhubarb, and a bigillion (oh fine, 14) types of squash. You can read more about him here - www.abelandcole.co.uk

The Saturday market, on Main Street in Saugerties, is across the street from the Cahill elementary school and next door to the Historical Society. We're open from 9am to 1pm. Local farmers show and sell their freshest fruits, veggies, meats, cheeses, wines etc. Guest chefs do demos. There are educational, arts and children's programs. The market has autumn and winter events too. It's a great place to socialize, relax. have lunch and select great foods from the bounteous Hudson Valley of New York.
